I will present a framework for studying general discrete Markov chains with interactions between particles, assuming that these interactions are of random matrix type. The approach is based on a novel holomorphic observable for the transition probabilities. As an application we will discuss inhomogeneous (q,kappa)-distributions on lozenge tilings and uncover their rich asymptotic behavior.
